Ingredients
  

Base Ingredients
  • 4 medium ripe peaches peeled and pitted
  • 2 medium ripe tomatoes cored
  • 1 small cucumber peeled and diced
  • 1 small red bell pepper seeded and diced
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 cup vegetable broth or water
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish
  • 1/4 cup fresh basil chopped
  • 1/4 cup croutons optional

Method
 

Preparation
  1. In a blender, combine the peaches, tomatoes, cucumber, red bell pepper, garlic, olive oil, red wine vinegar, and vegetable broth.
  2. Blend until smooth and creamy.
  3. Season with salt and black pepper to taste.
  4. Chill the gazpacho in the refrigerator for at least 30 minutes before serving.
Serving
  1. Ladle the chilled soup into bowls.
  2. Garnish with chopped basil and croutons if desired.
