Ingredients
  

Base Ingredients
  • 2 cups fresh peaches peeled and diced
  • 1 cup ricotta cheese whole milk
  • 1/2 cup heavy cream
  • 1/2 cup milk whole milk
  • 3/4 cup granulated sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Peach Mixture
  1. In a blender, combine the diced peaches, lemon juice, and half of the sugar. Blend until smooth.
  2. Transfer the peach puree to a mixing bowl and set aside.
Make the Ice Cream Base
  1. In the same blender, combine the ricotta cheese, heavy cream, milk, remaining sugar, and vanilla extract. Blend until smooth and creamy.
  2. Fold the peach puree into the ricotta mixture until well combined.
Chill and Churn
  1. Cover the mixture and refrigerate for at least 2 hours to chill.
  2. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
Freeze
  1. Transfer the churned ice cream to an airtight container and freeze for at least 2 hours before serving.
