Ingredients
  

Rice and Seafood
  • 2 cups cooked jasmine rice preferably day-old
  • 1 lb shrimp peeled and deveined
Vegetables and Fruit
  • 1 cup pineapple diced
  • 1 medium red bell pepper diced
  • 1 cup peas fresh or frozen
  • 2 scallions green onions sliced
Sauces and Seasonings
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce optional
  • 1 tbsp oyster sauce optional
  • 1 tbsp vegetable oil for frying
  • 1 tsp sesame oil for flavor
  • 1 tsp black pepper to taste
  • 1 tsp salt to taste
Garnish
  • 1 tbsp cilantro chopped, for garnish

Method
 

Prepare Ingredients
  1. Dice the pineapple, red bell pepper, and slice the green onions. Peel and devein the shrimp if not already done.
Cook Shrimp
  1. Heat vegetable oil in a wok over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove and set aside.
Stir-Fry Vegetables
  1. In the same wok, add the red bell pepper and peas. Stir-fry for 2-3 minutes until tender.
Combine Ingredients
  1. Add the cooked rice, pineapple, soy sauce, fish sauce, and oyster sauce to the wok. Stir well to combine.
Finish the Dish
  1. Return the cooked shrimp to the wok. Stir in sesame oil, black pepper, and salt. Cook for an additional 2-3 minutes until heated through.
Serve
  1. Garnish with chopped cilantro and sliced green onions. Serve hot.

Notes
