Ingredients
  

Brownie Base
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup chopped pistachios for topping
Cream Cheese Layer
  • 8 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pistachios for mixing

Method
 

Prepare the Brownie Base
  1. Preheat the oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. In a mixing bowl, whisk together the sugar and melted butter until combined.
  3. Add the eggs and vanilla extract, whisking until smooth.
  4. Sift in the cocoa powder, flour, and salt. Stir until just combined.
  5. Pour the brownie batter into the prepared baking pan and spread evenly.
Prepare the Cream Cheese Layer
  1. In another bowl, beat the softened cream cheese and powdered sugar until smooth.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. Fold in the chopped pistachios.
  4. Pour the cream cheese mixture over the brownie batter and swirl gently with a knife.
Bake the Brownies
  1. Sprinkle additional chopped pistachios on top.
  2. Bake in the preheated oven for 30-35 minutes, or until a toothpick comes out with a few moist crumbs.
  3. Allow to cool in the pan before slicing into squares.
