Ingredients
  

Base Ingredients
  • 1 cup pistachios unsalted, shelled
  • 1 cup pitted dates softened if necessary
  • 1/2 cup shredded coconut unsweetened
  • 1/4 cup honey or maple syrup for vegan option
  • 1/2 teaspoon vanilla extract
Optional Coating
  • 1/4 cup additional shredded coconut for rolling
  • 1/4 cup crushed pistachios for rolling

Method
 

Preparation
  1. In a food processor, combine the pistachios, pitted dates, shredded coconut, honey, and vanilla extract. Blend until the mixture is well combined and sticky.
  2. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  3. If desired, roll the balls in additional shredded coconut or crushed pistachios to coat.
  4. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  5. Store the energy balls in an airtight container in the refrigerator for up to one week.
