Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries or frozen, thawed
Crumble Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar packed
  • 1/4 cup unsalted butter melted

Method
 

Prepare Cookie Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the raspberries.
Make Crumble Topping
  1. In another bowl, combine the flour, oats, brown sugar, and melted butter. Mix until crumbly.
Bake Cookies
  1. Drop spoonfuls of cookie dough onto the prepared baking sheet, leaving space between each cookie.
  2. Sprinkle the crumble topping over each cookie.
  3. Bake for 10-12 minutes or until the edges are lightly golden.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
