Ingredients
  

Panna Cotta
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons gelatin powder unflavored
  • 3 tablespoons cold water
Rhubarb Sauce
  • 2 cups rhubarb, chopped
  • 1/2 cup granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice

Method
 

Prepare the Panna Cotta
  1. In a saucepan, combine heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is hot, but not boiling.
  2. In a small bowl, sprinkle gelatin over cold water and let it sit for about 5 minutes to bloom.
  3. Remove the cream mixture from heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.
  4. Pour the mixture into ramekins and refrigerate for at least 4 hours or until set.
Prepare the Rhubarb Sauce
  1. In a saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 10-15 minutes until rhubarb is soft. Stir in lemon juice.
  3. Remove from heat and let cool. Strain if desired for a smoother sauce.
Serve
  1. Once the panna cotta is set, remove from the refrigerator and top with rhubarb sauce before serving.

Notes

For a more intense flavor, you can add a pinch of salt to the panna cotta mixture.
