Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour sifted
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
Rhubarb Filling
  • 1 cup rhubarb chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice

Method
 

Prepare the Rhubarb Filling
  1. In a saucepan, combine chopped rhubarb, sugar, and lemon juice. Cook over medium heat until rhubarb is soft and mixture thickens, about 10 minutes.
Make the Cookie Dough
  1. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Stir in vanilla.
  2. Gradually add flour, salt, and baking powder, mixing until combined.
  3. Chill the dough in the refrigerator for 15 minutes.
Shape and Bake Cookies
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Roll the chilled dough into balls and place them on the prepared baking sheet. Make an indentation in the center of each ball with your thumb.
  3. Fill each indentation with the rhubarb filling.
  4. Bake for 12-15 minutes or until the edges are lightly golden. Let cool on a wire rack.
