Ingredients
  

Vegetables
  • 4 medium beets peeled and cubed
  • 2 cups broccoli florets fresh
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Dressing
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil for dressing
Toppings
  • 1/4 cup feta cheese crumbled, optional
  • 1/4 cup walnuts chopped, optional

Method
 

Roasting the Vegetables
  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed beets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet.
  3. Roast the beets in the preheated oven for 20 minutes.
  4. After 20 minutes, add the broccoli florets to the baking sheet, drizzle with the remaining olive oil, and roast for an additional 10 minutes until tender.
Preparing the Dressing
  1. In a mixing bowl, whisk together the balsamic vinegar, honey, Dijon mustard, and olive oil until well combined.
Assembling the Bowl
  1. In a large bowl, combine the roasted beets and broccoli. Drizzle with the dressing and toss to coat.
  2. Top with crumbled feta cheese and chopped walnuts if desired.
  3. Serve warm or at room temperature.
