  • 2 cups cooked chicken breast, shredded grilled or rotisserie chicken works well
  • 4 cups romaine lettuce, chopped or any preferred lettuce
  • 1 cup cucumber, sliced for crunch
  • 1 cup carrots, shredded adds sweetness
  • 1/2 cup red bell pepper, sliced
  • 1/4 cup green onions, sliced for garnish
  • 1/4 cup sesame seeds toasted for flavor
Dressing
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated

Method
 

Prepare the Chicken
  1. Grill or cook the chicken breast until fully cooked, then shred it into bite-sized pieces.
Make the Dressing
  1. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger until well combined.
Assemble the Salad
  1. In a large bowl, combine the chopped romaine lettuce, cucumber, carrots, red bell pepper, and shredded chicken.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Top with sliced green onions and toasted sesame seeds before serving.
