Ingredients
  

Beef
  • 2 pounds Chuck roast Trimmed of excess fat
Spices
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
Liquid
  • 1 cup Beef broth
  • 1/4 cup Lime juice Freshly squeezed
Taco Assembly
  • 8 pieces Corn tortillas Warmed
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese Cheddar or Mexican blend
  • 1/2 cup Sour cream
  • 1/4 cup Chopped cilantro

Method
 

Prepare the Beef
  1. Season the chuck roast with chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
  2. Place the seasoned beef in the slow cooker.
  3. Pour beef broth and lime juice over the beef.
  4. Cover and cook on low for 6-8 hours or until the beef is tender and easily shredded.
Shred the Beef
  1. Once cooked, remove the beef from the slow cooker and shred it using two forks.
  2. Return the shredded beef to the slow cooker and mix with the juices.
Assemble the Tacos
  1. Warm the corn tortillas in a skillet over medium heat.
  2. Fill each tortilla with shredded beef and top with lettuce, tomatoes, cheese, sour cream, and cilantro.
  3. Serve immediately and enjoy!
