Ingredients
  

Salad Base
  • 1 lb shrimp peeled and deveined
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Shrimp
  1. In a pot of boiling water, cook the shrimp for about 2-3 minutes until they turn pink and opaque. Drain and cool.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and cooked shrimp.
  2. Drizzle the dressing over the salad and toss gently to combine.
Serve
  1. Serve immediately, garnished with additional lemon wedges if desired.
