Preparation
- Place the chicken breasts at the bottom of the slow cooker.
- Add the diced onion, bell pepper, corn, black beans, diced tomatoes, and minced garlic on top of the chicken.
- Pour in the chicken broth and water.
- Sprinkle the chili powder, cumin, oregano, salt, and black pepper over the top.
Cooking
- Cover and cook on low for 6 hours or high for 3 hours.
- Once cooked, remove the chicken and shred it with two forks.
- Return the shredded chicken to the soup and stir well.
Serving
- Serve hot, garnished with tortilla strips, diced avocado, chopped cilantro, and a dollop of sour cream if desired.

This soup can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for up to 3 months.
