For the Savory Ground Beef & Aromatics
  • 1.5 lbs lean halal ground beef 85/15 or 90/10
  • 1 medium yellow onion finely diced
  • 4 cloves garlic minced
  • 1 tbsp olive oil
For the Slow-Cooker Soup Base
  • 3 medium bell peppers 1 green, 1 red, 1 yellow or orange, seeded and chopped into 1/2-inch pieces
  • 1 can 28 oz crushed fire-roasted tomatoes (with juices)
  • 1 can 15 oz tomato sauce
  • 4 cups low-sodium beef broth or chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce halal / anchovy-based, no alcohol
  • 1 1/2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp kosher salt plus more to taste
  • 1/2 tsp freshly cracked black pepper
For the Rice & Garnishes
  • 2 cups cooked long-grain white rice or jasmine rice warmed
  • 1 cup shredded sharp cheddar cheese or Monterey Jack for serving
  • 2 tbsp fresh Italian flat-leaf parsley finely chopped

Method

Step-by-Step Instructions
  1. Brown the Beef & Aromatics: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion. Cook for 6 to 8 minutes, breaking up the meat with a wooden spoon, until browned and cooked through. Add minced garlic and cook for 1 minute until fragrant. Drain off any excess grease and transfer meat mixture to a 6-quart slow cooker.
  2. Load the Slow Cooker: Add chopped bell peppers, crushed fire-roasted tomatoes, tomato sauce, beef broth, tomato paste, Worcestershire sauce, Italian seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well until the tomato paste dissolves into the broth.
  3. Slow Simmer: Cover with the lid and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the bell peppers are tender and the rich tomato-beef broth has deeply developed its comforting flavor.
  4. Incorporate the Rice: Stir the cooked white rice into the slow cooker during the last 20 to 30 minutes of cooking on LOW so the rice absorbs the savory broth without getting mushy. (Pro-tip: If you plan to freeze or store leftovers, spoon cooked rice directly into individual serving bowls and ladle the hot soup over top!)
  5. Adjust Seasoning & Serve: Taste and adjust salt and pepper if needed. Ladle generous steaming bowls of soup, top each with a generous handful of shredded sharp cheddar cheese and fresh chopped parsley, and serve with crusty sourdough bread!

Notes

Chef Secrets: 1. Always brown the ground beef with diced onion and garlic in a skillet first and drain excess fat before adding to the slow cooker; this builds fond and savory caramelized flavor while keeping the broth clean. 2. Stir in cooked rice during the final 20–30 minutes of cooking (or ladle soup directly over freshly cooked rice in bowls) rather than cooking dry rice for 6 hours; this prevents the grains from absorbing all your savory broth and becoming mushy. 3. Use a mix of green and red bell peppers—green provides that classic zesty tang, while red adds sweetness and vibrant autumn color.
