Ingredients
  

Pineapple Salsa Ingredients
  • 1 medium pineapple peeled, cored, and cut into rings
  • 1 medium red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 medium jalapeño seeded and minced
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt to taste

Method
 

Grilling the Pineapple
  1. Preheat the grill to medium-high heat.
  2. Grill the pineapple rings for about 3-4 minutes on each side, until grill marks appear and the pineapple is caramelized.
  3. Remove from the grill and let cool slightly before chopping into small pieces.
Preparing the Salsa
  1. In a mixing bowl, combine the chopped grilled pineapple, red bell pepper, red onion, cilantro, jalapeño, lime juice, smoked paprika, and salt.
  2. Stir well to combine all ingredients.
  3. Taste and adjust seasoning if necessary.
Serving
  1. Serve immediately with tortilla chips or as a topping for tacos.
