Ingredients

Dry Spiced Flour Blend
  • 2.25 cups all-purpose flour unbleached spooned and leveled
  • 2 tsp baking soda creates beautiful crinkly cracks
  • 2 tsp ground ginger bright warm ginger punch
  • 1.5 tsp ground cinnamon Ceylon cinnamon
  • 1/2 tsp ground cloves adds deep holiday warmth
  • 1/4 tsp ground allspice optional fragrant depth
  • 1/2 tsp fine sea salt balances the sweet molasses
Wet Molasses Batter
  • 3/4 cup unsalted butter 1 1/2 sticks softened
  • 1/2 cup dark brown sugar for moist fudgy chewiness
  • 1/2 cup granulated sugar
  • 1 large egg binds and lifts
  • 1/3 cup dark molasses do not use bitter blackstrap
  • 1 tsp vanilla extract
Sparkling Sugar Coating
  • 1/3 cup turbinado sugar for sparkling craggy crust

Method

Whisking Dry Ingredients
  1. In a medium mixing bowl, whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, ground cloves, allspice, and sea salt until thoroughly combined. Set aside.
Creaming Wet Ingredients
  1. In a large mixing bowl or stand mixer fitted with the paddle attachment, beat the softened butter, dark brown sugar, and granulated sugar together on medium speed for 2 to 3 minutes until light, fluffy, and well aerated.
  2. Add the egg, dark unsulfured molasses, and vanilla extract. Beat on medium speed for 1 minute until completely glossy and emulsified, scraping down the sides of the bowl as needed.
Forming the Dough & Chilling
  1. Turn the mixer to low speed and gradually add the dry flour mixture in two batches, mixing just until no flour streaks remain. Do not overmix. The dough will be thick, fragrant, and slightly sticky.
  2. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 to 45 minutes (or up to 48 hours). Chilling prevents excessive spreading and ensures an ultra-chewy texture.
Rolling & Sugar Coating
  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats. Place the coarse turbinado sugar in a shallow bowl.
  2. Using a 1.5-tablespoon cookie scoop (#40 scoop), portion dough into balls. Roll each ball smoothly between your palms, then roll generously in the sparkling turbinado sugar until completely coated on all sides.
  3. Place dough balls onto prepared baking sheets spaced about 2.5 inches apart to allow room for spreading.
Baking to Chewy Crinkled Perfection
  1. Bake one sheet at a time at 350°F (175°C) for 9 to 11 minutes. The cookies will puff up, develop beautiful deep cracks across the surface, and appear slightly soft in the center while the edges look just set. DO NOT overbake if you want them wonderfully soft and chewy!
  2. Remove from oven and immediately tap the baking pan firmly on the counter once or twice to encourage dramatic crinkle ridges. Let cookies rest on the warm baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
