Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken or vegetable broth
  • 1 cup diced tomatoes canned or fresh
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cooking the Rice
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
  2. Stir in the rice, cumin, paprika, salt, and pepper, cooking for 2-3 minutes until the rice is lightly toasted.
  3. Add the diced tomatoes and broth, bringing to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
Serving
  1. Remove from heat and let sit covered for 5 minutes. Fluff the rice with a fork.
  2. Garnish with chopped cilantro and serve with lime wedges.

Notes
