Ingredients
  

Rice and Vegetables
  • 1 cup long-grain rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 medium onion finely chopped
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes with juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon olive oil

Method
 

Cooking Spanish Rice
  1. In the rice cooker, heat the olive oil and sauté the onion, bell pepper, and garlic until softened.
  2. Add the rinsed rice, diced tomatoes, vegetable broth, cumin, paprika, salt, and black pepper to the rice cooker.
  3. Stir well to combine all ingredients.
  4. Close the lid and set the rice cooker to the 'white rice' setting.
  5. Once the rice cooker indicates that cooking is complete, let it sit for 5 minutes before opening the lid.
  6. Fluff the rice with a fork and serve warm.
