Prepare Meatballs
- Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground lamb, cumin, coriander, paprika, garlic, egg, breadcrumbs, parsley, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until cooked through and browned.
Prepare Couscous
- In a saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and stir in olive oil, chopped apricots, slivered almonds, and mint.
Serve
- Serve the spiced lamb meatballs over the couscous. Garnish with additional parsley or mint if desired.
