Ingredients
  

Meatballs
  • 1 lb ground lamb
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 clove garlic, minced
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
Couscous
  • 1 cup couscous
  • 1 cup vegetable broth or water
  • 1 tbsp olive oil
  • 1/4 cup dried apricots, chopped
  • 1/4 cup slivered almonds
  • 1/4 cup fresh mint, chopped

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground lamb, cumin, coriander, paprika, garlic, egg, breadcrumbs, parsley, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  3. Bake in the preheated oven for 20-25 minutes, or until cooked through and browned.
Prepare Couscous
  1. In a saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. Fluff couscous with a fork and stir in olive oil, chopped apricots, slivered almonds, and mint.
Serve
  1. Serve the spiced lamb meatballs over the couscous. Garnish with additional parsley or mint if desired.
