Ingredients
  

Pasta
  • 12 oz spaghetti or your preferred pasta
Pesto
  • 1 cup spring garlic peeled and chopped
  • 1/2 cup pine nuts toasted
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup olive oil extra virgin
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
Toppings
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup fresh basil chopped

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
Make Pesto
  1. In a blender, combine spring garlic, pine nuts, Parmesan cheese, lemon juice, salt, and pepper. Blend until smooth, gradually adding olive oil until the desired consistency is reached.
Combine
  1. In a skillet over medium heat, combine the cooked pasta and pesto. Toss until the pasta is well coated.
Serve
  1. Plate the pasta and top with cherry tomatoes and fresh basil. Serve immediately.
