Ingredients
  

Grains
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
Vegetables
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 1 cup snap peas trimmed
  • 1 cup radishes sliced
  • 1 cup baby spinach
  • 1 cup cherry tomatoes halved
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Toppings
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh herbs such as parsley or basil

Method
 

Prepare the Grains
  1. In a large pot, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and liquid is absorbed.
Cook the Vegetables
  1. In the last 5 minutes of cooking the quinoa, add the asparagus and snap peas to the pot. Cover and steam until tender.
Make the Dressing
  1. In a medium bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
Assemble the Bowl
  1. In a serving bowl, combine the cooked quinoa and vegetables. Add the baby spinach, cherry tomatoes, and drizzle with the dressing. Toss gently to combine.
Serve
  1. Top with crumbled feta cheese and fresh herbs before serving.
