Ingredients
  

Steak
  • 1 lb sirloin steak or ribeye
Eggs
  • 4 large eggs fresh
Hollandaise Sauce
  • 3 large egg yolks
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 cup unsalted butter melted
  • 1/4 tsp salt
  • 1/4 tsp cayenne pepper optional
English Muffins
  • 2 whole English muffins split and toasted
Garnish
  • 2 tbsp chopped chives for garnish

Method
 

Prepare the Steak
  1. Season the sirloin steak with salt and pepper. Heat a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare. Let it rest before slicing.
Make the Hollandaise Sauce
  1. In a saucepan, whisk together egg yolks and lemon juice over low heat until the mixture thickens. Gradually whisk in melted butter until smooth. Season with salt and cayenne pepper.
Poach the Eggs
  1. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes until the whites are set but yolks are still runny. Use a slotted spoon to remove.
Assemble the Dish
  1. On each toasted English muffin half, place a slice of steak, top with a poached egg, and drizzle with hollandaise sauce. Garnish with chopped chives.
