Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil for cooking
Pineapple Glaze
  • 1 cup pineapple juice preferably fresh
  • 1/2 cup brown sugar packed
  • 1/4 cup soy sauce low sodium recommended
  • 2 cloves garlic minced
  • 1 teaspoon ginger freshly grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
Garnish
  • 2 green onions sliced for garnish
  • 1/4 cup sesame seeds toasted

Method
 

Cook the Chicken
  1. Heat olive oil in a skillet over medium-high heat. Add the chicken thighs and cook until browned and cooked through, about 6-7 minutes per side.
Prepare the Glaze
  1. In a mixing bowl, combine pineapple juice, brown sugar, soy sauce, garlic, and ginger. Mix well.
  2. Pour the mixture into the skillet with the chicken and bring to a simmer.
  3. Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.
Serve
  1. Serve the sticky pineapple chicken over rice, garnished with sliced green onions and toasted sesame seeds.
