Ingredients

For the Chicken & Slow-Cooker Glaze
  • 2.5 lbs bone-in skinless chicken thighs approx. 6 pieces, halal
  • 1/2 cup raw clover honey
  • 1/2 cup low-sodium soy sauce or tamari
  • 1/4 cup hoisin sauce adds deep umami sweetness
  • 6 cloves garlic finely minced
  • 1 tbsp fresh ginger finely grated
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1/2 tsp crushed red pepper flakes optional for subtle kick
  • 1/2 tsp freshly cracked black pepper
For the Glaze Thickening & Garnish
  • 2 tbsp cornstarch whisked with 2 tbsp cold water slurry
  • 1 tbsp toasted white sesame seeds
  • 3 scallions green onions, thinly sliced on the bias
  • Steamed jasmine rice and broccoli for serving

Method

Step-by-Step Instructions
  1. Arrange Chicken in Slow Cooker: Pat the chicken thighs dry with paper towels and arrange them in a single even layer across the bottom of a 6-quart oval slow cooker.
  2. Whisk the Honey Garlic Sauce: In a medium mixing bowl, whisk together the honey, low-sodium soy sauce, hoisin sauce, minced garlic, grated ginger, toasted sesame oil, rice vinegar, red pepper flakes, and black pepper until completely smooth and emulsified.
  3. Pour & Coat: Pour the prepared sauce evenly over the chicken thighs, ensuring every piece is generously coated.
  4. Slow Braise to Tenderness: Cover with the lid and cook on LOW for 5 to 6 hours (or on HIGH for 3 to 4 hours) until the chicken thighs are fork-tender and reach an internal temperature of 175°F to 180°F.
  5. Thicken the Sticky Glaze: Carefully transfer the tender chicken thighs to a warm platter. Whisk the cornstarch and cold water slurry directly into the bubbling slow cooker juices. Cover and cook on HIGH for 15 to 20 minutes (or pour sauce into a small saucepan over medium heat for 5 minutes) until the glaze turns deeply mahogany, glossy, and thick enough to coat the back of a spoon.
  6. Baste & Serve: Return the chicken thighs to the slow cooker and spoon the rich sticky glaze generously over each piece. Garnish with toasted sesame seeds and fresh sliced green onions. Serve hot over steaming jasmine rice and steamed broccoli florets!

Notes

Chef Secrets: 1. Use bone-in chicken thighs: Bone-in, skinless chicken thighs hold up gorgeously over hours of slow braising without drying out, staying unbelievably succulent and tender. 2. The cornstarch reduction trick: Slow cookers trap steam, which naturally dilutes sauces. Whisking the cooking juices with a quick cornstarch slurry and simmering for 15 minutes turns the liquid into an ultra-glossy glaze that clings tenaciously. 3. Broil for caramelized edges (optional): For crispy charred edges, transfer the glazed thighs to a foil-lined baking sheet and broil for 3 to 4 minutes before serving.
