Ingredients
  

Flapjack Base
  • 2 cups rolled oats
  • 1/2 cup unsalted butter melted
  • 1/4 cup honey
  • 1/4 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
Cheesecake Filling
  • 8 ounces cream cheese softened
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
Strawberry Topping
  • 1 cup fresh strawberries sliced
  • 1 tablespoon sugar to taste

Method
 

Prepare the Flapjack Base
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine the melted butter, honey, brown sugar, and vanilla extract.
  3. Stir in the rolled oats and baking powder until well combined.
  4. Press the mixture into the prepared baking dish evenly.
Make the Cheesecake Filling
  1. In another bowl, beat the softened cream cheese, sugar, lemon juice, and vanilla extract until smooth.
  2. Spread the cheesecake filling over the flapjack base in the baking dish.
Add Strawberries and Bake
  1. Sprinkle the sliced strawberries on top of the cheesecake filling.
  2. Bake in the preheated oven for 25 minutes or until set and golden.
  3. Allow to cool before slicing into squares.
