Ingredients
  

Filling
  • 2 cups fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar adjust based on sweetness of strawberries
  • 1 tablespoon cornstarch for thickening
  • 1 tablespoon lemon juice freshly squeezed
Crisp Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon optional

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine sliced strawberries, granulated sugar, cornstarch, and lemon juice. Toss to coat and set aside.
Make the Crisp Topping
  1. In another bowl, mix together oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
  1. Spread the strawberry mixture evenly in the bottom of the baking dish. Sprinkle the crisp topping over the strawberries.
  2. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
  3. Remove from the oven and let cool before cutting into bars.
