Ingredients

  • 2 cups sweet potatoes peeled and cubed
  • 1 can chickpeas drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water adjust for consistency

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Spread the cubed sweet potatoes on a baking sheet and drizzle with olive oil. Roast for 25-30 minutes until tender.
  3. In a blender, combine the roasted sweet potatoes, chickpeas, tahini, lemon juice, garlic, cumin, salt, and black pepper.
  4. Blend until smooth, adding water gradually to reach desired consistency.
  5. Taste and adjust seasoning as needed.
Serving
  1. Transfer the hummus to a serving bowl and drizzle with additional olive oil if desired. Serve with pita chips or fresh vegetables.

Notes
