Step-by-Step Instructions
- Form the Beef Patties: In a large bowl, combine ground beef, panko breadcrumbs, beaten egg, Worcestershire sauce, Dijon mustard, tomato paste, garlic powder, onion powder, salt, and black pepper. Mix gently with your hands just until combined (do not overwork the meat). Shape into 6 uniform oval patties, about 3/4-inch thick.
- Quick Sear: Heat olive oil in a large skillet over medium-high heat. Add patties in batches and sear for 2 to 3 minutes per side until deeply browned (they do not need to be cooked through). Transfer seared patties to a plate.
- Layer the Slow Cooker: Scatter half of the sliced onions and cremini mushrooms across the bottom of a 6-quart slow cooker. Arrange the seared beef patties on top in a single or slightly overlapping layer. Scatter the remaining onions, mushrooms, and minced garlic over the patties.
- Whisk & Pour the Gravy: In a medium bowl, whisk together the beef broth, brown gravy mix, Worcestershire sauce, and thyme until smooth. Pour evenly over the patties and mushrooms in the slow cooker.
- Slow Braise: Cover with the lid and cook on LOW for 5 to 6 hours, or on HIGH for 3 hours, until the beef patties are melt-in-your-mouth tender.
- Thicken the Gravy: Whisk cornstarch and cold water together to form a smooth slurry. Gently stir the slurry into the bubbling gravy around the patties. Cover and cook on HIGH for 20 to 30 minutes until the gravy is thick, glossy, and spoon-coating.
- Garnish & Serve: Garnish generously with freshly chopped parsley. Spoon tender patties and copious amounts of rich mushroom-onion gravy over warm garlic mashed potatoes or buttered egg noodles!

Notes
Chef Secrets: 1. Don’t skip searing the beef patties! A quick 2-minute sear per side locks in the juices, develops a deep caramelized crust, and keeps the patties from falling apart during hours of slow cooking. 2. Layer half the sliced mushrooms and onions beneath the patties and the other half over top so the meat is gently braised and infused from all sides. 3. Thicken the gravy during the final 30 minutes with a quick cornstarch slurry stirred directly into the slow cooker liquid for a luscious, glossy restaurant finish.
