Ingredients
  

Chicken and Sauce
  • 1 pound boneless, skinless chicken breasts sliced into thin strips
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
Vegetables
  • 1 cup broccoli florets
  • 1 cup bell pepper sliced
  • 1 cup carrots sliced
  • 1 cup snap peas
Garnish
  • 2 tablespoons sesame seeds toasted
  • 2 scallions sliced

Method
 

Prepare the Sauce
  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and cornstarch mixture until well combined.
Cook the Chicken
  1. Heat the wok over medium-high heat. Add a splash of oil and stir-fry the chicken strips until cooked through, about 5-7 minutes.
Add Vegetables
  1. Add broccoli, bell pepper, carrots, and snap peas to the wok. Stir-fry for another 3-5 minutes until vegetables are tender-crisp.
Combine and Serve
  1. Pour the teriyaki sauce over the chicken and vegetables. Stir well to combine and cook for an additional 2 minutes until the sauce thickens.
  2. Serve hot, garnished with sesame seeds and sliced scallions.
