Tex-Mex Beef Enchiladas

Delicious beef enchiladas filled with seasoned ground beef, cheese, and topped with a rich enchilada sauce.

Ingredients
  

Filling
  • 1 lb ground beef or ground turkey
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 cup cheddar cheese shredded
  • 8 small corn tortillas
Sauce
  • 2 cups enchilada sauce store-bought or homemade
Toppings
  • 1 cup sour cream
  • 1 cup cilantro chopped
  • 1 cup green onions sliced

Method
 

Prepare the Filling
  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in chili powder, cumin, and salt. Cook for another 2 minutes.
  4. Remove from heat and mix in shredded cheddar cheese.
Assemble Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  3. Warm the corn tortillas in a skillet or microwave to make them pliable.
  4. Place a portion of the beef filling in each tortilla, roll them up, and place seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas.
  6. Bake in the preheated oven for 20 minutes.
Serve
  1. Remove from the oven and let cool for a few minutes.
  2. Top with sour cream, chopped cilantro, and sliced green onions before serving.

Notes

For a spicier version, add diced jalapeños to the filling or use hot enchilada sauce.
