Ingredients
  

Muffin Batter
  • 1 cup all-purpose flour
  • 1 cup ube puree can be found in Asian grocery stores
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk can use almond or coconut milk for dairy-free
  • 1/4 cup vegetable oil
  • 1 large egg
Cream Cheese Filling
  • 4 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Method
 

Prepare Muffin Batter
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the ube puree, milk, vegetable oil, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
Make Cream Cheese Filling
  1. In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Assemble Muffins
  1. Spoon a small amount of muffin batter into each muffin cup, followed by a dollop of cream cheese filling, and then top with more muffin batter until cups are about 2/3 full.
  2. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
