Method
Slow-Cooking the Chicken & Vegetables
- Place raw chicken breasts in the bottom of a 6-quart slow cooker. Add diced Yukon gold potatoes, carrots, celery, onion, and minced garlic around the chicken.
- Pour in 4 cups halal chicken broth. Season with kosher salt, coarse black pepper, poultry seasoning, thyme, and tuck in the bay leaf.
- Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours until the chicken and potatoes are completely fork-tender.
Shredding the Chicken & Making the Cream Roux
- Remove the cooked chicken breasts to a cutting board and shred into bite-sized pieces with two forks. Discard the bay leaf.
- In a small saucepan over medium heat, melt the 4 tbsp butter. Whisk in the flour and cook for 1 to 2 minutes until bubbly and fragrant. Slowly ladle 1 cup of hot broth from the slow cooker into the flour mixture, whisking constantly until smooth and thick. Whisk in the heavy cream.
- Pour the warm cream roux mixture into the slow cooker and stir well. Return shredded chicken to the pot along with the thawed green peas. Cover and cook on LOW for another 20 to 30 minutes until thick and velvety.
Baking the Flaky Puff Pastry Toppers
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unroll the thawed puff pastry sheet onto a lightly floured surface. Use a 3-inch round biscuit cutter or drinking glass to cut out 6 to 8 rounds. Place rounds on the baking sheet.
- Brush tops lightly with egg wash and sprinkle with flaky sea salt and fresh thyme leaves. Bake for 12 to 15 minutes until tall, deeply golden brown, and delightfully crisp.
Serving & Garnishing
- Ladle hot creamy chicken pot pie soup into wide shallow soup bowls. Shower with chopped fresh Italian parsley and cracked black pepper.
- Crown each bowl with a warm, flaky puff pastry topper right on top of the soup or serve on the side for dipping. Enjoy immediately!
