Ingredients
  

Cake Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Cherry Filling
  • 1 cup fresh cherries pitted and halved
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
Frosting
  • 1 cup heavy cream cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a heart-shaped cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the creamed mixture, alternating with milk.
  5. Pour half of the batter into the prepared cake pan.
Make the Cherry Filling
  1. In a saucepan over medium heat, combine the cherries, sugar, cornstarch, and lemon juice. Cook until thickened, about 5 minutes.
  2. Spread the cherry filling over the batter in the cake pan.
  3. Top with the remaining cake batter and smooth the top.
Bake the Cake
  1. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Prepare the Frosting
  1. In a mixing bowl, beat the cold heavy cream until soft peaks form.
  2. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
Assemble the Cake
  1. Once the cake is completely cool, frost the top and sides with the whipped cream frosting.
  2. Decorate with additional cherries if desired.
