Ingredients
  

Base
  • 2 cups Cooked Sushi Rice Chilled
Toppings
  • 2 cups Watermelon Diced
  • 1 cup Cucumber Diced
  • 1 cup Avocado Sliced
  • 1/2 cup Radishes Thinly sliced
  • 1/4 cup Green Onions Chopped
  • 1/4 cup Sesame Seeds Toasted
Dressing
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 teaspoon Rice Vinegar
  • 1 teaspoon Honey Optional
  • 1 teaspoon Sriracha Optional for heat

Method
 

Prepare the Base
  1. Cook sushi rice according to package instructions. Once cooked, let it cool and chill in the refrigerator.
Prepare the Toppings
  1. Dice the watermelon, cucumber, and slice the avocado and radishes. Chop the green onions.
Make the Dressing
  1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and sriracha until well combined.
Assemble the Bowl
  1. In serving bowls, place a scoop of chilled sushi rice. Top with diced watermelon, cucumber, avocado, radishes, and green onions. Drizzle with dressing and sprinkle with sesame seeds.
