Ingredients
  

Salad Base
  • 2 cups cooked white beans canned or homemade
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the cooked white beans, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
