Ingredients
  

Wild Rice Base
  • 1 cup wild rice rinsed
  • 2 cups vegetable broth
Vegetables
  • 1 cup chopped bell peppers any color
  • 1 cup chopped broccoli
  • 1 cup cherry tomatoes halved
  • 1 cup corn fresh or frozen
Protein
  • 1 can chickpeas drained and rinsed
  • 1 cup quinoa cooked
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Toppings
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Wild Rice
  1. In a pot, combine wild rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until rice is tender.
Roast the Vegetables
  1. Preheat the oven to 400°F (200°C). On a baking sheet, toss bell peppers, broccoli, corn, and cherry tomatoes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
Prepare the Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper.
Assemble the Bowl
  1. In a large bowl, combine cooked wild rice, roasted vegetables, chickpeas, and quinoa. Drizzle with dressing and toss to combine.
  2. Top with feta cheese and fresh parsley before serving.
